Our Chef’s specials change daily in response to the availability of fresh vegetables, meat, and seafood. The following are examples of recent dinner specials at the Prospect Cafe.
Black Sea Bass en Brodo – Pan-Roasted Filet of Fresh Sea Bass in Broth, Garlic-Roasted Baby Fingerling Potatoes, Sauteed Fresh Fiddleheads and Connecticut-Grown Sugar Snap Peas.
Parrilla Mixta (Argentine Mixed Grill) – Marinated Hanger Steak, Grilled Chicken, and Spanish Chorizo, Served with Fresh Native Corn and Chimichurri Sauce.
Cinnamon-Braised Lamb Shanks – Australian Lamb, Seared and Slow-Cooked with Cinnamon and Mediterranean Herbs. Served with Pan Jus, Celery Root Puree and a Plum-Balsamic Caponata.
Steamers in Guinness – Fresh Maine Steamers, Cooked Gently in Beer and Served with Drawn Butter.
Pan-Roasted Arctic Char – Served with a Sweet Potato and Pancetta Hash, Sautee of Fresh Wild Mushrooms and Buttered Brussel Sprouts.
Pacific Pan-Seared Scallops – Fresh Sea Scallops, Seared and Cooked Gently in Slightly Sweet Coconut-Curry Sauce. Served with Fresh Bell Peppers, Ginger, and Steamed Rice.
Chicken Sausage and Cavatappi – Local Artisanal Tomato-Basil Chicken Sausage and Cavatappi Pasta in a Light Asiago Cream Sauce, Gratineed with Goat Cheese.
